1 onion, 1 yellow pepper, 1 banana pepper, 1 can pinto beans, 2 cans mild old el paso enchilada sauce, 1 block extra sharp cheddar, 1 block pepper jack cheese,cut up onion and pepper, shred both blocks of cheese, drain/rinse cheese. Heat oven to 350 In large bowl combine onion, pepper, beans. Put about 1/2 cheese in and pour in about 1/2 of 1 can of sauce. Spray the bottom of the a 9x13 dish and pour a small amt of sauce in bottom of dish, just enough to coat. Lay a tortilla in the pan on oone end, floded to kind of look like a taco, scoop in filling, roll up the tortilla and push to the end of the pan. repeat to use all filling. in the large bowl combine remaining cheese and sauce. pour over top of the enchiladas. cover dish with foil back 30-40 min. remove foil and back another 10-15.
